
Salmon meatballs with avocado cream
🔵 Ingredients:
– 500 g of fresh salmon
– Bread crumbs
– 1/2 teaspoon of chili powder
– 2 tablespoon of chopped parsley
– 2 cloves garlic, minced
– 1 egg
– Salt and pepper
For the avocado cream:
– 1 avocado
– Juice of 2 limes
– 1/4 cup of sour cream (or yogurt)
– 1/4 basil
– 2 tablespoons of parsley
👉 Instructions:
1. Preheat the oven to 180° C. Prepare a baking tray with greased baking paper.
Grid the salmon in a blender, then add the bread crumb, chili powder, parsley, garlic and egg, and season it with salt and pepper. Mix well and form spoon-sized meatballs. Place them on the prepared tray and bake until the meatballs are lightly browned, about 15 – 17 minutes.
2. For the cream, in the blender, cream the avocado with the lime juice, yogurt, basil and parsley. Season it with salt and pepper. If the cream is too thick, add a little water.
3. Serve the meatballs drizzled with avocado cream and decorate with more parsley.
You can serve them with a delicious green salad!
