
Between August 7 and 11, various restaurants will offer preparations based on the product. There will also be a tasting in the main square.
Between August 7 and 11, Puerto Montt will experience the first version of “Salmon Week”, a period during which prominent local restaurants and eateries will offer a varied selection of dishes made based on the product, with special attention to a traditional recipe: the popular cancato.
The event is organized by the Dalcas Patagonia Costa Community Board and the Tourism Directorate of the Municipality of Puerto Montt (Ditur), supported by Salmón Chile and the Patagonia Costa Public Good.
Everything will begin with a launch in Puertomontina’s main square on August 7, from 12:00 p.m. There you can enjoy a gastronomic exhibition with free tastings, live presentations and the opportunity to learn more about the versatility and quality of this fish that has been in force for more than four decades in the region.
The restaurants and venues participating in this celebration are Adela, Don Papi, Tablón del Ancla, Hotel Abba, Cirus Bar, La Rinconada, Gusto Sureño, Di Nocetti, La Magia de Alicia, Fish and Ships and Viento Sur. Each of the establishments will present its special menu, in which salmon will be the protagonist.
In addition, chefs have been inspired by the tradition of cancato, a typical dish where fish is baked stuffed with cheese, sausages and other ingredients. This fusion of tradition and culinary creativity promises to be a unique experience for those who visit each place.
“This is a boost to both the participating dining rooms and restaurants, as we seek to break seasonality with events, which in turn highlight products that have a constant presence on the menus of our city. Likewise, the validity of a dish is highlighted. traditional dish that, thanks to this fish, has been revitalized as a recipe,” commented Marcelo Wilson, director of Ditur.
Meanwhile, chef Frederic Emery said that “we are very happy as a Dalcas Patagonia Costa community table to be able to organize the first Salmon Week here in Puerto Montt, the reception from the restaurants has been excellent, we have the support of the Municipality from Puerto Montt and from SalmonChile we will receive more than 200 kilos of Salmon, we will have training, tastings and we hope that this is the beginning of a date that will stay with the commune forever.”
In parallel, various activities have been scheduled, in the same premises, which will include artistic presentations, live music and talks about the importance of salmon in the diet and local economy.
In addition, a Field Day will be held. This activity, aimed at participating canteens, will include visits to salmon companies in the region. Attendees will have the opportunity to learn up close about the salmon farming and production process, thus strengthening their knowledge and the possibilities of the resource.
Specialized training on dishes inspired by cancato has also been organized, aimed at professionals, with the aim of perfecting the preparation and presentation techniques of the recipe.
