
Today you can cook a healthy and delicious salmon with mushrooms and nuts.

Ingredients:
– 700 g of clean salmon
– Boiled potatoes (as side dish)
– 4 tablespoons of sliced almonds
– 4 tablespoons of sliced hazelnuts
– 4 tablespoons of sesame seeds
– 2 tablespoons of fresh cilantro
– 2 tablespoons of extra virgin olive oil
– 1 tablespoon of coarse salt
– 1/2 tablespoon of black pepper
Sauce ingredients:
– 300 g of mushrooms
– 6 little onions
– 1 tablespoon of butter
– 1 tablespoon of balsamic vinegar
– 2 tablespoons of fresh parsley
– Salt and pepper
👉 Instructions:
Cut the salmon, add salt and let it rest for 5 minutes. After the time has passed, rinse it, dry it and leave it on a baking tray greased with oil. While you do that, preheat the oven to 170°C.
Then, in a bowl, mix the chopped nuts with the sesame seeds, cilantro and pepper, stir well and pour on top of the salmon.
In another container, prepare the vinaigrette with a little water, salt, pepper, parsley and balsamic vinegar, and then marinate the salmon with this mixture and put it in the oven for a maximum of 20 minutes so that it is perfectly cooked.
At the same time, sauté the onions cut in julienne strips with the sliced mushrooms in a little butter for 5 minutes.
Serve your delicious baked salmon with boiled potatoes and mushroom sauce.
